This is a very simple and basic dough recipe which can be used for fatayer, sfiha, stuffed bread, pizza, calzone, and much more. Generally in middle eastern cuisine and specifically in Palestinian cuisine we bake a lot. Much of our cuisine include different types of stuffed dough; some of which I will be posting about. I tested for years with many recipes until I settled for this one as my “go to” basic dough recipe. The recipe requires few ingredients and can be easily doubled or tripled.

The amount of water used for this recipe depends on the flour type you use; for me it usually takes around one cup of water. I would suggest you start by adding half a cup, then adding a little at a time until you get a nice dough.

Don’t worry if by mistake you added a little extra water and the dough became sticky; just simply add one table spoon of flour at a time until u get a nice dough.

This dough amount should be enough to make a 10 inch pizza base.

Ingredients: 

– 2 cups All Purpose Flour

– 2 tablespoons of  Olive Oil

– 1 tablespoons of Fast acting Yeast

– 1 teaspoon of Sugar

– 1/4 teaspoon Salt

Direction:

In a mixing bowl of a stand-up mixer, add the flour then all the remaining ingredients.

Add enough water to knead it. The amount of water you need depends on the flour brand and type you use. Usually for me it takes around one cup of water. I would suggest starting with 1/2 cup of water and then adding a little at a time until you get a smooth dough that doesn’t stick to your hand when you touch it.

With the dough hook attached; let the dough knead for at least 10 minutes then place it in a lightly oiled bowl. Wrap the bowl with a towel and leave it in a warm place for half an hour to rise.

To know if the dough is well risen just simply press it down with your finger. If the dough stays in then its well risen and is ready to be used; while if the dough rises again then you should give it more time to rise.

  1. Your basic dough recipe is like the pizza/foccacia dough recipe I use! My recipe calls for a bit more flour, but other than that it’s the same. I think this kind of dough is really wonderful because you can make it into anything – pizza, calzones, focaccia, breakfast pizza.
