Chocolate Cake

Over the years I tried many chocolate cakes. Only two recipes I have fallen in love with. One is my Mama’s chocolate cake, which is rich dense and delicious and the other is this moist chocolate cake . I’m sure you too will fall in love with it as its chocolaty, rich, and super moist. Perfect for any occasion in my opinion. After all you cant go wrong with a chocolate cake.

Ingredients:

  • 2/3 cup cocoa powder, preferably dutch processed
  • 2/3 cup boiling water
  • 2 teaspoon vanilla extract
  • 2 cups cake flour*
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 12 tablespoons (6 oz.) butter
  • 1 cup caster sugar
  • 1 cup light brown sugar
  • 3 eggs
  • 1 cup sour cream

*if u don’t have it then use all purpose but for every cup remove 2 tablespoons of flour

Preheat oven to 180°C. Prepare two 9-inch spring form pans by placing a parchment paper at the bottom. Then in a bowl, sift together the flour, baking soda, and salt. Set them aside.

In a small bowl, add the cocoa powder to the boiling water and vanilla. Mix until combined and set aside to cool down.

In a stand up mixer, add the butter and sugars (caster sugar and brown sugar).

Mix them until they become light and fluffy.

Add the eggs one at a time and mix after each addition.

Then add the cocoa mixture and mix until combined.

Once its combined, start alternating the flour and the sour cream. Add a little at a time of each and mix. Start and end with flour and DO NOT over mix it.

So add the flour first.

Then the sour cream. And so on.

Finish by adding the last amount of flour and the cake is ready to be baked.

Pour the batter into the prepared pans and bake for 30 to 35 mins or until tester inserted comes out clean.

Allow the cake to cool for 10 mins then remove from the pans and let cool completely.

Now that the cake is ready you can Decorate it using  this simple Chocolate Frosting.
