Coconut Cinnamon Chips

I came up with this coconut cinnamon chips to use to decorate my dad’s cinnamon birthday cake. They turned out so good that I had to stop myself from finishing it.

They are simple to make and the combination of cinnamon and coconut was just perfect. Once baked they are crispy and delicious.

You will need:

  • 2 cup unsweetened coconut chips
  • 1/4 cup + 2 tablespoon powder sugar
  • 1 teaspoon cinnamon, heaped
  • few tablespoons water

Direction:

Coconut Cinnamon Chips - coconut chips

Start by placing the coconut in a bowl.

Coconut Cinnamon Chips - sugar and cinnamon

In another bowl, mix together the powder sugar and cinnamon.

Coconut Cinnamon Chips - add water

Add one tablespoon at a time of water and stir. Add more water if needed. Be careful not to add too much. You want it to just be wet enough to coat the coconut.

Coconut Cinnamon Chips - mix

Add the sugar mixture to the coconut and mix it until well coated. All the coconut should be coated with no extra liquids at the bottom of the bowl.

Coconut Cinnamon Chips - spread into baking sheet

Spread the cinnamon coconut chips on a baking sheet and bake it until its crisp and crunchy. This will take about 15 to 20 minutes.

Coconut Cinnamon Chips - serve

Thats it! A simple, sweet and crunchy snack.

Happy Baking, and as we say in Arabic “Sahha Wi Afia”

  1. I LOVE this idea! And it seems so simple. The next time I make something ‘desserty’ i’ll have to add these. Or maybe I’d try it with pecans like you suggested.

  3. Laila, thanks for this recipe. I made it yesterday as toppings for my cheesecake and it’s awesome! Since I couldn’t find unsweetened coco chips (my grocery only carries sweetened coconut shave), I doubled the cinnamon and added 1/4 t nutmeg and baked for 10 minutes in 350F. It’s a perfect foil to the richness of the cheesecake. And the leftover chips I left uncovered (outside the refrigerator) are still crispy after more than 30 hours!

    1. Im glad u tired it Corksandcurds … its good that u mentioned that it worked well with sweetened coconut .. to be honest i didnt try it with it … now i know that it works just as good … and im sure the nutmeg gave it a nice taste too …. thanx for letting me know how it turned out … stay in touch .. 🙂
