I made this recipe for a friend of mine. Her in-laws were coming for a visit and she wanted something to serve them. So I thought of this recipe for her as she can serve this marinated roasted peppers on their own or they can be served in a Mini Loaf.
This marinade is simply delicious, in my opinion. It has the perfect blend of the charred roasted peppers and the creaminess of the mozzarella cheese.
You can make this recipe and keep in the refrigerator for two weeks.
You will need:
- 1 big red pepper
- 3/4 cup mozzarella cheese, cubed
- 1/2 cup olive oil
- A very small clove, minced*
- 1/4 teaspoon dried rosemary
- Salt and pepper
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried sage
* The minced garlic is around 1/4 of a teaspoon.
Start by placing the bell pepper on a hot plate over high heat.
Char it from all side. Don’t worry that it looks black; that’s what will give it the charred taste.
After it gets black from all side, place it in a bowl and cover it with cling wrap. Then leave it for at least 15 to 20 mins. This step is important as it will make it easy to peel the pepper later.
While waiting, prepare the oil for the marinade. In a bowl, mix the olive oil, garlic, rosemary, oregano and sage. Season with a little salt and pepper then set it aside.
After 20 mins, take out the cling wrap. Be careful the pepper might be still hot. If it was too hot to handle, then cover it again and keep it a little longer. Once the pepper cools enough to handle, peel it. The peel should come right of. You will be surprised how easy it gets off.
Slice the roasted pepper into medium size pieces.
Add the roasted peppers along with the mozzarella cubes to the olive oil mixture. Mix it well.
Allow it to marinate for at least 30 mins. The longer you marinate it the better the taste. If you are planning on keeping it longer, then add enough olive oil to cover, this will preserve it. Then store it in the fridge.
Serve it as is with a side of toasted pitta bread or use it as filling for some mini loaves
