I love strawberries. Love to add them to every dessert I can. Even as a child, when it came to candy… I like the strawberry ones better. So when it comes to cakes, I will for sure find a way to add a strawberry filling to it.
Try this very simple way in making strawberry filling which can be used in vanilla, chocolate or in this case sponge cake.
You will need:
- 2 cups whipping cream
- 1 1/2 tablespoons sugar
- 1 teaspoon vanilla extract
- 250 grams strawberries, one packet
In a stand up mixer with the whisk attachment, add the whipping cream, sugar and vanilla. Whisk the cream until stiff peak forms.
Prepare the strawberries by slicing it into thin pieces like in the photo.
Mix half the whipped cream with all the strawberries, and keep the remaining for frosting the cake.
Refrigerate the filling until you are ready to use it. Check out how I used this filling in the strawberry cake which is to be posted in few mins.
