In this post I will show a very simple way of making stuffed mini loaf. Yesterday I went to see a friend of mine and thought I would bring along something small to share. So I came up with this idea, and it was a great hit.
I made three different types of stuffed mini loaf. The first one i filled with marinated roasted peppers. The second was filled with white cheese and green olives.Then I thought of making the last one sweet; hence the cinnamon sugar.
You will need :
- Dough recipe, double the recipe
- Marinated roasted peppers
- 1/2 cup White cheese*
- 1/4 cup Pitted sliced green olives
- 1/2 cup Light brown sugar
- 1 tablespoon cinnamon
- Milk, for brushing the dough
* You can use any type of white cheese, such as feta or halloumi
Start by preparing all the fillings. Prepare the roasted peppers and set aside. Then grate the cheese and prepare olives and set aside. And mix the sugar and cinnamon and them set aside too.
Start by dividing the dough into six equal pieces. Then on a lightly floured surface, roll out the first piece of dough. The size of the dough will depend on the size of the pan you use.
After rolling, spread the marinated roasted peppers. Make sure to leave the edges empty so u can seal it well.
Roll the dough and seal it at the end and tuck in the sides. It should be totally sealed so that the stuffing wont get out.
Place the sealed dough in the mini loaf pan. Then continue stuffing a second dough piece with roasted peppers.
Then repeat the same process with the white cheese and olive. Also make two.
Finally fill the last two pieces of dough with cinnamon sugar. Make sure they too are well sealed.
Brush all the loaves with milk and sprinkle each type differently. I used paprika for the roasted peppers loaf, sesame for the cheese and olive loaf, and cinnamon sugar for the cinnamon and sugar loaf.
Bake for nearly 30 mins or until they are perfectly browned from the bottom and golden from the top. Let it cool before slicing it.
