The flavor of this cake can be changed by omitting the vanilla extract and adding the flavor of choice. The flavor might be cinnamon, lemon, orange, of even almond extract.
If you want to make it into a chocolate sponge cake then reduce the flour to one cup and add 1/4 cup of cocoa.

You will need:
- 1 1/4 cup All purpose flour
- 7 eggs
- 1 teaspoon, baking powder
- 1 cup sugar
- 2 ts vanilla extract
Preheat the oven to 180°C. Prepare a 2 9-inch cake pan by placing a parchment paper at the bottom. Now in a small mixing bowl, mix the flour and the baking powder.
In a stand up mixer with the whisk attachment, add the eggs, sugar and vanilla extract.
Add a little amount of flour, around 2 to 3 tablespoon. Then mix it into the egg mixture in a round and across motion. Meaning; one time go in a circle around the bowl and one time across the bowl. Do this gently.
Keep in mind that we don’t want the egg mixture size to reduce a lot.
Repeat by adding flour, a little at a time, until all the flour is mixed in.
Pour the batter into the prepared pan and bake for 30 to 40 mins or until the tester inserted comes out clean.
Decorate it in any way you like.
